Our Bubbles
It all started with a grape. One harvest, I popped a Delaware grape into my mouth–so distinct and delicious–and I needed to know how this grape gained the world’s attention in the late 1800s with a traditional method sparkling wine. I wanted to explore more expressions of Finger Lakes sparkling–expanding the line to include the queen of the Finger Lakes, Riesling, as well as a stellar Cornell-developed hybrid, Cayuga White.
2018 Sparkling Riesling

The queen of the Finger Lakes deserves the royal treatment of methode champenoise. Riesling shines as a sparkling wine. With bright acidity and notes of lemon zest, this Extra Brut bubbly is a perfect accompaniment for meals.
2018 Sparkling Cayuga White
Cases produced: 76
Developed at Cornell University, Cayuga White shows notes of granny smith apple and is simultaneously complex and approachable after 36 months on the lees. We recommend chilling two bottles–the first one is going to go fast.
2018 Sparkling Delaware

The Delaware grape (along with Catawba) is responsible for catapulting the Finger Lakes’ reputation for sparkling wine in the late 1800s. With distinctively fruity aromas, this sparkling wine offers a taste of New York's history. Enjoy this special Sec with creamy cheeses and fruit tarts.
